Chef Luke’s Honey Rosemary Brew Mustard
2 cups Whole Grain Mustard
1/2 cup honey
1 tsp chopped rosemary
1 cup beer “I used Urban Lodge Costal Redwood IPA in this batch” reduced by 1/2 (see below)
Pinch of salt and pepper to taste.
Reduce beer on stove in a pot and cook on med heat until reduced by half. Watch the heat as beer will foam over. If this happens turn your flame down and keep it low. You will notice the beer turning darker and concentrating. This is the process of removing the water and strengthening the rich hop and barley flavors.
Cool the beer
Add all of these ingredients together and whisk them up
