Alumni Dinner

We have invited a few of our most successful alumni of the MACCchefs Culinary Jobs Program to come back and each prepare a course for this 5-course celebration and benefit dinner.

TENTATIVE MENU // $95 pp (includes gratuity)

FIRST COURSE:
Soupe et Salade Duo
Wild Mushroom Bisque / Arugula, Radish, Preserved Lemon Salad

SECOND COURSE:
Coquille Saint-Jacques
pan-seared sea scallops | mint pea puree | crispy pancetta | pomegranite molasses & seeds

THIRD COURSE:
Parpadelle Pasta
butternut squash "alfredo" / swiss chard / cranberries / crushed pistachios

FOURTH COURSE:
Chilean Sea Bass "Wellington / cognac vanilla butter-poached lobster / mushroom duxelles, melted leeks / puff pastry / buerre blanc / purple potato puree / sauteed winter greens

FIFTH COURSE:
earl grey vanilla bean crème glacée | olive oil pumpkin 5-spice cake | gingered cranberries | creme anglaise | biscotti crumble
